FOOD San Francisco

Let’s be honest—cronuts are an artifact of the past. We've all been there, having tasted (or at least read about) that, right?

But if you’re looking for a new croissant mashup to obsess about, consider the not-particularly-humble tacro.

San Francisco-based Vive La Tarte is responsible for this innovation. Creative director Jimmy Houghton told SFGate that the new item was the result of two months of experimentation.

"We took our regular croissant dough that we make and we tried to fill it with pulled pork or with chicken, and we found that the flavors didn't combine well. The pastry was way too rich, way too buttery, way too sweet," he said. They aimed for something saltier and with a more savory taste.

The tacro seems to have taken off on Instagram, but what’s it like to eat one?

"It just works really well,” designer Max Schultz told SFGate recently after trying a tacro. “You can kind of squish the croissant and actually get a bite so it's kind of more like a sandwich and you're not cracking the taco (shell)." He came back for another try the next day.

In contrast, designer Lenny Chan said, "It wasn't the most amazing thing I've ever had, but it's something new.”

Well, it definitely is that.
