Food just tastes better when it fits in line with your aesthetic doesn't it? Rhubarb might as well be known as the most social media famous vegetable, because it's pretty pink color was made to be photographed. As one of the first spring produces to come into season, the perennial plant serves as a signifier of warmer weather ahead.
“Imagine the first rosy rhubarb of the year,” Elizabeth Schneider wrote in 'Vegetables from Amaranth to Zucchini,' “welcome as new grass.”
This darling springtime vegetable is often mistaken for fruit because it is mostly prepared in desserts. From pies and cakes to jams and cocktails, rhubarb is the perfect culinary accent to start celebrating spring.
“A relative of buckwheat, its flavor earthy and bracingly sour, rhubarb thrives in cold climates—although its glowing color suggests the tropics,” Schneider wrote.
