Joffrey Dubaul, a 29-year-old oyster farmer out of France, is making the world his oyster. In an attempt to stay relevant in the era of food fads, Dubaul hopes his flavoured oysters will be the next big sensation.
To achieve his unique oyster taste, he soaks them in flavoured sea water. Depending on the essence he's looking for, the process takes anywhere from 2 to 12 hours.
Available in lemon, raspberry, and ginger, the flavored oysters are becoming quite a success.
“I thought that if there’s no need to get the lemon separately, it’ll tempt a younger crowd to have oysters with pre-dinner drinks,” Dubault told Bloomberg. “It turns out that restaurants in China, Dubai, Spain, Belgium, and Italy fell for the idea.”
At oyster season's European peak, Dubaul sells and ships up to two tons of flavoured seafood per day.
