Biotechnology firms are in the race to try to mimic meat in all its senses—taste, aroma, and texture—without the animal. Using animal cells, labs are attempting to recreate meat without having to slaughter an animal. More than 150 start-ups are in the race to bring this idea to fruition. There are scientific challenges that scientists are facing in their attempts, but many are confident that the way of the future is via the lab.
